And now for something completely different

At Kroger a few weeks ago, I got baby carrots for 20 cents a bag. I bought all they had. So now, with an abundance of carrots, what's a girl to do? Anyone have a fantastic carrot recipe that I have to have? We made carrot cookies this week, and they were more delicious than I remember as a kid. Of course, maybe it was the huge pile of chopped pecans that I put in these ones. At any rate, they were yummy, and Emery has been asking for those carrot cookies all week.

Grandma Stewart's Carrot Cookies

2 c. cooked carrots, mashed
1 1/2 c. shortening
1 1/2 c. sugar
2 eggs
Cream together. Add:
4 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
1 c. chopped nuts

Drop by spoonfuls onto cookie sheet. Bake at 350 degrees for 15 minutes. Ice while warm.
Icing:
2 c. powdered sugar
3 Tbsp. orange juice (or lemon juice)

Chani's hair is really coming in. It's long on top and in the back, although there's not enough for two ponys in the back, one side is pretty thin. It must be how she sleeps. This morning while she was eating her cereal, she got milk in her hair, what were you saying about Clayton's table manners, Millie? I couldn't resist these pictures.

Emery is getting too smart for his own good. The other day he was walking through the dining room and this was the conversation:

E: I need my wife.
M: Who's your wife?
E: You're my wife.
C:She's not your wife, she's my wife.
E: No, Mama is my wife.
C: No, my wife.

This went on for quite a while, Clint and Emery discussing who I belonged to. It was cute.



In other Emery news, he read me an entire alphabet book yesterday afternoon. It was so fun to hear him say each letter and then tell me what sounds they make. He's a smart one!

Okay, so I will have to try the cookie recipe. Sounds yummy. Also, love the pictures of Chani's hair. So funny.
And..."I need my wife" I couldn't stop laughing. That is too cute.
